Delicious, quick, & easy egg bites recipe with Anaheim peppers, sun-dried tomatoes, fresh rosemary, & sharp cheddar cheese.

Preheat oven to 375 degrees. Stem the rosemary. Add 9 eggs and rosemary leaves to a blender. Blend on high speed until the eggs are beaten and the rosemary is finely minced.
Finely chop the sun-dried tomatoes. Seed and dice the Anaheim pepper. Shred cheddar cheese and season the egg mixture with salt and pepper.
Lightly grease a muffin pan with cooking spray. Pour 1/4 cup of the egg mixture into each muffin well and sprinkle with chopped Anaheim peppers, reserving some of the peppers for the topping.
Next, sprinkle each muffin with chopped sun-dried tomatoes, dividing them equally among the 9 muffins.
Top the egg bites with shredded sharp cheddar cheese and chopped Anaheim peppers. Bake for 15-20 minutes, or until a toothpick inserted into the middle comes out clean.
